Hollandse mosterdsoep (Dutch mustard soup)

Fancy a delicious Dutch soup with bite? This fiery mustard soup from the Netherlands is guaranteed to hit the spot!


2 stock cubes (enough for 1 litre)
50 grams of butter
60 grams of white flour
A generous dollop of whipped cream
2 tablespoons of spicy mustard
1 spring onion

Dutch mustard soup recipe


First bring 1 litre of water containing 2 stock cubes to the boil. Meanwhile, pop the flour into a mixing bowl and stir in enough water to form a smooth paste. Now pour the paste into a saucepan and place on a low heat. Add in the butter and thoroughly stir until smooth. Cook for a few more minutes and then gradually pour in the stock until nice and creamy. Leave to simmer on a low heat for 10 minutes, before finally stirring in the mustard and the whipped cream. Serve your Dutch mustard soup garnished with chopped spring onion and crispy pieces of fried bacon for added oomph.
