You might regard carrots as winter fare – however, this versatile root vegetable is equally delicious in summer salads, including our fresh, light carrot salad with raisins below!
First soak the raisins in a bowl of lukewarm water for approx. 20 minutes and then pat dry with kitchen towel. Next grate both the carrots and the apple, stir in the yoghurt mayonnaise and vinegar, and season with salt and pepper. Finally, stir in the raisins and your yummy carrot salad is good to go! Ideal as a side dish, especially at barbecues.
