Witlofsalade met appel en ei (chicory salad with apple and egg)

Do your children tend to turn their noses up at chicory? Then try this tempting chicory salad with apple and egg – it boasts a deliciously sweet and refreshing flavour that’s simply too good to resist!

Ingredients

4 heads of chicory
1 small onion
1 tablespoon of mayonnaise
1 sweet apple
1 tablespoon of lemon juice
1 teaspoon of icing sugar
1 egg
Tomato ketchup

Preparation

First boil the egg for 10 minutes, before leaving to cool. Meanwhile, cut the chicory heads into rings and place into a large bowl of cold water for approx. 10 minutes (in order to remove their bitter flavour). Next drain the chicory in a colander and place into a large salad bowl. Now finely chop the onion, coarsely grate the apple, and then stir this, together with the mayonnaise, lemon juice and sugar, into the chicory. Finally, peel and slice the boiled egg, use to garnish the salad and top each slice with a little tomato ketchup. For best results, serve immediately.
