No Dutch-Indonesian meal is quite complete without a side of sajoer beans – a wonderfully spicy stir-fry dish made from green beans.
500 grams of green beans
1 clove of garlic
1 tablespoon of ketjap manis
1 teaspoon of ground ginger
½ tablespoon of sambal oelek (or fresh red chilli peppers)
1 teaspoon of coriander powder
200 ml of chicken stock
200 ml of coconut milk
First wash the green beans, remove their stalks and break in half. Next dice the onion and crush the garlic, place into a wok or frying pan, and gently stir fry together with the sambal. Now add the ketjap manis, green beans, ginger powder, coriander powder and a pinch of salt, and then stir-fry for a few more minutes. Finally, pour in both the stock and coconut milk, and gently simmer your sajoer boontjes for a further 10 minutes prior to serving.
