Hollandse ovenschotel met postelein (Dutch mash dish with purslane)

Purslane is a delicious, leafy green and a traditional ingredient in Dutch spring recipes, including our tempting purslane mash dish below.


1 kilo of potatoes
300 grams of purslane
100 grams of cumin cheese
100 grams of mature Dutch cheese
A splash of milk
A knob of butter

Dutch mash recipe with  purslane


First peel the potatoes, cut into pieces, place into a pan of water containing a pinch of salt, and cook until tender. Next drain the potatoes, add in a knob of butter and a splash of milk, and then finely mash. Now rinse the purslane, drain in a colander and stir into the mash potato. Next cut the cumin cheese into small chunks and stir thoroughly into the mash. Season the mash with salt and pepper and spoon into a baking dish. Lastly, top with grated mature Dutch cheese and place under the grill for approx. 10 minutes, or until golden brown. Serve immediately.
