Rauwe andijviestamppot (raw endive mash)

Spring has finally arrived, meaning that it’s time for an authentic Dutch mash dish! Although this raw endive mash is vegetarian, it may also be served with bacon and Dutch smoked sausage or meatballs if preferred.


1 kilo of potatoes (or 1 pack of Maggi mashed potatoes)
1 endive head
100 grams of Dutch cheese
150 ml of milk
A generous knob of butter
Salt and pepper

Dutch recipe for rauwe andijviestamppot


First peel the potatoes, cut them into pieces and then place into a deep pan. Cover with a layer of water, season with salt and bring to the boil. Now leave the potatoes to gently simmer on a low heat for 20 minutes. Meanwhile grate the cheese and finely slice the endive. Once ready, drain the potatoes and stir in the milk and butter. Season with salt and pepper and then roughly mash the potatoes using a potato masher, before adding in the grated cheese and endive. Stir thoroughly once more, divide the stamppot among 4 plates and enjoy!
