Tuesday 17th February is International Pancake Day – a holiday that’s predominantly celebrated in Britain, Ireland, Australia and Canada, where it’s also known as ‘Shrove Tuesday’, ‘Pancake Tuesday’ or simply ‘Pancake Day’. Fancy something different this year? Then why not give your favourite pancakes a delightful Dutch twist with this delicious Dutch recipe for speculaaspannenkoeken?

Dutch pancake recipe

1 pack of Koopmans Pancake Mix
1 tablespoon of speculaas spices
800 ml of milk
2 eggs
Butter or margarine

Pour the pancake mix into a mixing bowl, together with the milk, eggs and speculaas spices, and then stir into a smooth batter. Next heat a knob of butter or margarine in a frying pan and add in a tablespoon of pancake batter. Spread the batter evenly over the pan and fry on both sides until golden brown. Repeat this process until you’ve exhausted all of the batter. Finally serve your pancakes the traditional Dutch way, with a generous splash of pouring syrup and a light dusting of icing sugar.
