Stroopwafelcake (syrup waffle cake)

This delicious Dutch cake, made from authentic syrup waffles from Holland, is an ideal treat throughout the Sinterklaas season and an absolute doddle to prepare!

Dutch syrup waffles


½ pack of Koopmans farmers cake mix
200 grams of butter
100 grams of brown sugar
4 eggs
6 stroopwafels (Dutch syrup waffles)


Preheat your oven to 160 C. Meanwhile, place the butter into a mixing bowl and stir until soft and creamy. Next, add in the cake mix, brown sugar and eggs, and then stir thoroughly until smooth, light and airy. Now using a knife, crush the Dutch syrup waffles and mix 2/3 of the crumbs into the cake batter. Next pour the batter into a cake tin and top with the remaining biscuit crumbs. Finally, bake the cake for about 60 minutes or until golden brown, and then leave to cool for at least 30 minutes before slicing. Serve with a cup of tea or coffee at any time of day.
