Banketletter (pastry letter)

No Sinterklaas celebration is complete without an authentic banketletter – a delicious letter made from light puff pastry. You can order your very own banketletter, in addition to a variety of other seasonal products, from leading online Dutch supermarket, Holland at Home. Alternatively, why not have a go at making this traditional Dutch Sinterklaas treat at home?

Ingredients

8 sheets of puff pastry dough
400 grams of almond paste
2 eggs
1 tablespoon of lemon zest
1 tablespoon of cream

Preparation

First preheat your oven to 200 C. Meanwhile place the almond paste, 1 of the eggs, the lemon zest and fresh cream into a bowl and mix thoroughly into a firm dough. Now, using a rolling pin, roll the almond paste mix out onto your kitchen work surface. Next line a baking tray with baking paper and place the slices of puff pastry next to each other in a row, with the edges overlapping by about 1 cm. Press the edges together and then cover with the freshly rolled almond paste. Now fold the dough closed and press the edges firmly together. Turn the pastry until the sealed edge is nicely hidden, and then shape into your chosen letter. Finally, beat the remaining egg in a bowl, lightly brush the banket letter with it, pop into the oven and bake for about 35 minutes or until golden brown.
