A deliciously light, yet surprisingly filling pasta salad with salmon that’s perfect on a hot summer’s day and absolutely ideal for picnics!
First prepare the pasta according to the instructions on the packaging and then leave to cool. Meanwhile, wash the broccoli and cut into small pieces. Cook the broccoli for a few minutes until ‘al dente’, before also allowing to cool. Now mix the pasta, broccoli, peas and red salmon together in a bowl, and stir in the dressing. Season with salt and pepper and place into the refrigerator to chill for one hour. Finally, garnish with chopped parsley and / or spring onions, and serve with fresh bread.
