Hollandse groentetaart (Dutch vegetable tart)

Fancy a typical Dutch dish, but want to give meat a miss? Then try this delicious Dutch vegetable pie, made from only the finest of Dutch summer vegetables!


6 slices of puff pastry
100 grams of green beans
100 grams of peas
1 courgette
1 cup of mushrooms
2 onions
30 grams of butter
250 grams of grated Dutch cheese (e.g. Old Amsterdam)
2 tbsp. of flour
200 ml of milk
50 grams of walnuts
1 spring onion

Dutch vegetable tart recipe


Preheat your oven to 225° C and defrost the puff pastry. Next grease the bottom of a cake tin or oven dish with butter and line with puff pastry. Prick the pastry intermittently with a fork. Now chop the onions, slice the courgette, snap the greens beans in half, and cook all of the vegetables (except for the onions and spring onion) for around 5 minutes. Next heat some butter in a pan and gently fry the onions until translucent. Add the flour and milk and continue to stir until the sauce becomes nice and creamy. Season to taste with salt and pepper, and stir in the vegetables, walnuts, and half of the cheese. Now spoon the vegetable mixture into the pastry and sprinkle over the remaining cheese. Pop the oven dish into the centre of your oven and bake the Dutch vegetable tart for about 30 minutes or until golden brown. Finally, garnish with slices of spring onion and serve with a fresh summer salad.
