Brazilian cheese balls (Pão de Quejo) Dutch style

Fancy enjoying a typical Brazilian snack while watching the Netherlands dazzle at the 2014 World Cup? Then try Pão de Quejo – a popular Brazilian snack with a rich and creamy cheese filling that goes perfectly with a refreshing glass of Dutch beer. And, in honour of the Dutch football team, our patriotic version contains authentic Dutch cheese for a typical Dutch twist!

Ingredients

500 grams of tapioca flour
200 grams of extra mature Gouda cheese (grated)
2 eggs
4 tbsp. of sunflower oil
200 ml of whole milk
A pinch of salt

Brazilian pao-de-quejo recipe

Preparation

Preheat your oven to 190 C. Meanwhile place the milk, sunflower oil and a pinch of salt into a saucepan and bring to the boil, taking care to constantly stir. Next pour the tapioca flour into a mixing bowl and then thoroughly mix in the eggs and freshly prepared hot milk mixture. Now add in the grated cheese, mix thoroughly once more, and knead into a somewhat runny dough. Shape with a spoon into small round balls, place onto a greased baking tray and pop into your oven. Bake for about 15 minutes or until a lovely golden brown.
