Gestoofde kabeljauw met dragonsaus (stewed cod with tarragon sauce)

Certain herbs are simply perfect paired with fish. Tarragon, which is available both fresh or dried, is one such herb!


4 cod fillets
4 tbsp. of flour
A knob of butter or margarine
½ a glass of dry white wine
1 tbsp. of lemon juice
2 tbsp. of cream
1 tbsp. of tarragon
1 tbsp. of capers
Salt and pepper

Shake a few tablespoons of flour onto a plate, sprinkle your cod fillets with salt and pepper and then place into the flour. Next heat the margarine or butter in a frying pan and fry the cod fillets until golden brown. Now pour the wine and lemon juice into the pan and gently simmer on a low heat for a further 10 minutes. Once cooked, remove the fish from the pan, place on a plate and keep warm. Now stir the cream into the remaining liquid and allow to partially reduce. Add the tarragon and capers, stir the sauce thoroughly and season with salt and pepper. Finally, pour the sauce over the fish and serve with baked potatoes, green beans or garden peas.
