Varkensrollade (pork roulade)

You can buy ready made varkensrollade from most Dutch supermarkets – alternatively you can have a go at making this delicious Dutch pork dish seasoned with fresh herbs yourself!


750g of pork fillet
1 tsp. of sage
1 tsp. of rosemary
1 clove of garlic
1 dl of stock
100g of butter or margarine
1 tbsp. of flour

First lightly coat the pork fillet with sage, rosemary and salt and then roll it up tightly using roulade string. Next heat the butter or margarine in a frying pan and gently fry the pork roulade until golden brown. Whilst frying, sprinkle the pork with some more rosemary and add a crushed clove of garlic to the pan. Now add the stock and cook for around 1 hour or until tender. Once cooked, remove the pork roulade from the pan and leave it to rest on a plate under some aluminium foil. Next bring the stock to the boil and thicken with a little flour until it forms a lovely rich gravy. Lastly slice the pork roulade into generous portions and serve with new potatoes, warm vegetables and your freshly prepared gravy.
