Rijst met bruine bonen en spek (rice with brown beans and bacon)

A hearty Dutch winter warmer made from brown beans, bacon and rice, that’s simply perfect for those colder days!

Ingredients:

1 knob of butter
2 onions
150g of bacon
3 tbsp. of tomato puree
1 tin of chopped tomatoes
2 Maggi stock cubes
4 cloves
1 bay leaf
½ a tsp. of ground nutmeg
300g of brown rice
4 jars of Dutch brown beans

Preparation:

First slice the onions into rings, cut the bacon into strips, and drain the brown beans in a colander. Next heat the butter in a frying pan and gently fry the onions until transparent. Stir in the bacon and fry for a further 3 minutes. Now add in the tomato puree, chopped tomatoes, 200 ml of hot water, stock cubes, cloves, bay leaf and nutmeg, before bringing to the boil and then leaving to simmer on a low heat for 15 minutes. Meanwhile, prepare the brown rice according to instructions on the packaging. Lastly, stir the brown beans into the tomato sauce, season with salt and pepper, and simmer for 5 minutes. Divide the rice between 4 plates and top with the beans. Serve in traditional Dutch style with a generous helping of piccalilly.

    What are Dutch brown beans exactly? Are they Pinto beans? If not, what could I use if I don’t have Dutch beans? I live in England.
