Preitaart met Hollandse kaas en spek (leek pie with Dutch cheese and bacon)

Nothing is quite as tasty or, indeed, satisfying as a delicious leek pie …and this delightful dish is also remarkably easy to prepare!

6 slices of puff pastry
75 grams of bacon cubes
1 kilo of leeks
2 eggs
2 tablespoons of cream
75 grams of grated mature Dutch cheese
A knob of butter
Salt and pepper

Leek pie recipe

Preheat your oven to 200 C. Next grease a spring form tin (22 cm in diameter) and line with the pastry. Slice the leek into thin rings, rinse thoroughly and leave to drain in a colander. Now gently fry the bacon in a pan, add the leeks and cook for a few minutes before carefully spooning into the cake tin. Next crack open the eggs over a mixing bowl, stir in the cream, freshly ground pepper and grated Dutch cheese, and then pour over the leek mixture. Finally, pop the leek pie with Dutch cheese and bacon into your oven for around 25 minutes or until a lovely golden brown. Allow to cool for a few minutes before removing from the tin. Divide the leek pie into generous portions and serve with a fresh, crisp salad.
