Christmas and New Year is a particularly special time for many. Unfortunately it’s often the most calorie rich too! If you’ve over indulged during the festive season, then our delicious Dutch diet recipes below could help you to shed a few of those extra pounds gained over the holidays.
All recipes serve 4 people.
Gestoomde kabeljauwfilet met groenten (steamed cod fillet with vegetables)
4 cod fillets
1 head of broccoli
2 tablespoons of white wine
First fill a pan (that will accommodate a large colander) ¼ full with water, cover and bring to the boil. Meanwhile, rinse the cod fillets under cold water and pat dry with kitchen paper. Wash the broccoli and cut into small florets, wash the lemon and grate the zest, and then finely chop the shallot. Next lay 4 sheets of baking paper onto your kitchen counter and place a cod fillet onto each. Drizzle over a little white wine and sprinkle with some lemon zest, finely chopped shallot and broccoli, and then fold the baking paper over the fish and tightly close to form a parcel. Now pop the parcels into a colander, place into the pan that contains the boiling water and cover. Steam the fish for about 10 minutes or until tender, before opening the parcels and arranging the contents onto four plates. Serve with steamed brown rice or new potatoes. A steamer or steam oven may also be used in place of the pan.
Andijvie-zuurkool salade (endive-sauerkraut salad)
100 grams of endive
100 grams of sauerkraut
150 grams of feta cheese
A cup of chopped cashew nuts
4 tablespoons of olive oil
1 teaspoon of mustard
1 tablespoon of lemon juice
Salt and pepper
Wash the endive and cut into thin strips. Remove the sauerkraut from the jar and rinse with cold water if desired. Cut the tomatoes into pieces and slice the onion and then mix the vegetables together in a bowl. Now prepare a dressing from the olive oil, lemon juice and mustard and drizzle generously over the vegetables. Lastly crumble the feta cheese and sprinkle over your salad along with the chopped cashew nuts. Season with salt and pepper and serve with warm, freshly baked baguette.
Slanke macaroni met ham en kaas (macaroni with ham and cheese)
First prepare the macaroni according to the instructions on the packaging. Meanwhile, finely chop the onion and fry in a pan until golden brown and then remove from the heat. Next grate the cheese and cut the ham into cubes. Once ready, thoroughly drain the pasta and then stir in the fried onion, grated cheese and diced ham. Serve with a mixed salad and a light dressing, such as Calvé salad dressing light or Calvé salad dressing yogurt.
