Konijn op zijn Hollands (rabbit Dutch style)

You might think that apple syrup and breakfast cake are only to be enjoyed at breakfast. Yet there are a number of delicious savoury dishes that are a perfect match for these sweet treats … such as this tempting recipe for rabbit with apple, breakfast cake and beer for example. Remember that the rabbit must marinate overnight, so start in plenty of time if you wish to serve this on Christmas Day.


1/2 a rabbit
3 bay leaves
4 cloves
150 ml of red wine vinegar
1 bottle of special beer
75g of butter
3 onions
6 slices of Dutch breakfast cake
4 tbsp. of Dutch apple syrup

Rabbit Dutch style


Put the bay leaves, cloves, red wine vinegar and beer into a large bowl and add in the rabbit. Pour in enough water to completely cover the rabbit and then place the bowl into your refrigerator and leave overnight. The following day, remove the rabbit from the marinade, pat dry and sprinkle with a little salt and pepper. Heat half of he butter in a deep pan and gently fry the rabbit a few minutes until lightly browned. Now add in the marinade and bring back to the boil. Meanwhile, fry the onions in a separate frying pan with the remaining butter. Finally add the onions, breakfast cake and apple syrup to the pan containing the rabbit. Cover and leave the rabbit to stew over a low heat for about 2 hours. Season the rabbit with salt and pepper.
