Mosselen in kruidenboter (mussels in garlic butter)

Dutch mussels are arguably the finest in the world and more than warrant loving preparation. You can prepare your mussels the traditional Dutch way (see our delicious Dutch mussels recipe) or serve with a tempting garlic butter using the mouth-watering recipe below.

1 kg of mussels
1 onion
1 stalk of celery
1 small bunch of parsley
4 cloves of garlic
100 g of butter
Salt and pepper to taste

First preheat your grill. Next rinse the mussels thoroughly in cold water, place into a soup pan together with a litre of water, some coarsely chopped onion and celery and bring to the boil. Shake the pan occasionally whilst cooking to encourage all of the mussels to open. Once ready, remove the mussels and leave to cool. Meanwhile, finely chop the parsley and garlic and mix, together with a little salt and pepper, into the butter. Now take the mussels, break off half of their shells and, using a teaspoon, smear a little garlic butter onto each. Pop the mussels onto a baking tray lined with baking paper and place under the grill until a lovely golden brown.
