Gevulde tongrolletjes (stuffed sole rolls)

These delicious stuffed sole rolls, make an ideal starter that’s particularly suitable at Christmas or other festive occasions!


600 g of sole fillet
200 g of smoked salmon
100 g of fresh spinach
1 litre of fish stock
1 glass of white wine
½ cup of milk
1 cup of cream
Cocktail sticks
Salt and pepper to taste

First wash the spinach and cook briefly (approx. 1 minute) in water. Next prepare the stuffed sole rolls by taking a slice of sole fillet, a slice of smoked salmon and some fresh spinach leaves and rolling together before fastening with a cocktail stick. Now place the fish stock into a pan and bring almost (but not quite) to the boil. Add in the stuffed sole rolls and leave to cook gently for around10 minutes, taking care to ensure that they do not boil. Meanwhile prepare a white wine sauce from the white wine, milk and cream and pour a little onto each plate. Finally, arrange the stuffed sole rolls on top of the sauce, garnish with some leftover spinach leaves and season with salt and pepper. Serve with tasty new potatoes and a crisp, fresh salad.
