Kabeljauw met walnoten en kaas (cod with walnuts and cheese)

Cod is a delicious and extremely versatile fish that’s ideal with Dutch cheese and this incredibly simple recipe is a perfect example!


4 cod fillets (of approx. 150 grams each)
100 g of chopped walnuts
100 g of grated Dutch cheese
2 knobs of butter
1 glass of dry white wine
1 onion
2 small carrots
A slice of lemon
A sprig of parsley
A pinch of thyme
A pinch of pimento grains (allspice)
1 bay leaf
Salt to taste

First slice the onions and carrots and then place into a large saucepan or frying pan. Add in ½ a litre of water, a glass of dry white wine, a slice of lemon, the parsley, thyme, pimento grains and bay leaf and season with salt. Bring the mixture almost (but not quite) to the boil and then simmer on a low heat for half an hour. Next add in the cod fillets and cook gently for 15 minutes, taking care to ensure that the fish is completely immersed and doesn’t boil. Once cooked, carefully remove the fish and place into an oven dish. Preheat your oven to 200 C. Meanwhile continue to cook the stock until only half of it remains. Pour 1 dl of stock over the fish, add a few knobs of butter and then sprinkle with walnuts and grated cheese. Finally, place the oven dish into the oven for around 10 minutes or until the cheese has melted to a lovely golden brown.

Tip: Keep any leftover stock as it makes the perfect base for homemade fish sauce or fish soup.
