Do you sometimes find yourself hankering back to the seventies? The good old days of endless summers, when Dutch pop bands such as Golden Earring and Shocking Blue ruled the international charts? The Dutch were increasingly experimenting in their kitchens during the 1970’s too and, thanks largely to the influence of Dutch immigrants, their typical Dutch dishes were beginning to assume more colour and flavour.
The following five dishes were exceptionally popular in 1970’s Holland – so, if you fancy a trip down memory lane, then why not don your flares, slip on your platform shoes and swing by your kitchen to prepare our delicious 70’s feast?
Garnalencocktail (prawn cocktail)
The prawn cocktail was regarded as the height of luxury in the 1970’s, yet it’s incredibly easy to prepare. Simply shred a little iceberg lettuce and use to make a bed for the prawns in your finest cocktail dishes. Add a generous helping of freshly cooked Dutch prawns, top with a tablespoon of whiskey sauce, garnish with fresh parsley or dill and, hey presto, your typical 70’s starter is good to go!
Biefstuk met pepersaus (steak in pepper sauce)
Everyone has a preference when it comes to their steak: some like it so raw that it almost has a pulse, whilst others won’t touch it unless it’s cooked to a frazzle. Yet, what every steak lover does have in common, is that they all adore a creamy pepper sauce. Delicious pepper sauce, which took off in a big way in the 1970’s, can be poured directly over your chosen cut of steak or served separately if you prefer.
Stokbrood te kruidenboter uit de oven (oven baked garlic bread)
Although a typical 1970’s recipe, oven baked garlic bread is still a favourite with many Dutch today. It can be purchased ready-made in Dutch supermarkets, or alternatively, you can have a go at making it yourself. To do so, mix a little chopped garlic and chives into approx. 100 grams of soft dairy butter and season with salt and pepper. Next spread your garlic butter liberally over a fresh or part baked baguette and warm in the oven for a few minutes before serving. Delicious!
When the Dutch first switched on their electric grill ovens in the 1970’s, life in the kitchen became easier almost overnight and the quintessential 70’s dish of stuffed peppers was born! To prepare stuffed peppers at home, remove both the pepper top and their seeds before cooking gently for a few minutes in water. Next, drain and fill the peppers with your preferred mix of minced meat and cooked rice, flavoured with a herb blend such as Silvo seasoning and top with some freshly grated Dutch cheese. Finally place the peppers into your oven or directly under the grill, wait until the cheese turns a lovely golden brown, and enjoy!
During the 1970’s Dutch families enjoyed nothing more than a quiet evening in playing board games, watching TV and dining together. And what could be more fun than a meat or cheese fondue party? To prepare a meat fondue seventies style, fill your fondue pan with vegetable oil and heat on the stove. As soon as the oil is hot enough, place the fondue pan on the fondue burner and allow your eager diners to prick their chosen piece of meat (using the fondue forks supplied) and subsequently cook in the oil until tender. Cheese fondue works in exactly the same way – simply swap the oil for a special fondue cheese and replace the meat with hearty chunks of baguette. Bon appetit!
