Arretjescake (Dutch cold cake)

Arretjescake is a traditional Dutch cold cake that’s left to set in the fridge for one day. Delicious with a cup of tea or coffee!

1 pack of whole wheat biscuits
250 gr of butter
250 gr of sugar
1 egg
3 tbsp. of cocoa powder
3 tbsp. of chocolate sprinkles

Dutch cold cake

First put the butter into a saucepan and gently melt over a low heat, taking care to constantly stir. Meanwhile break or crumble the biscuits into a bowl and stir in the sugar, cocoa powder and egg. Next stir in the melted butter and mix into a lovely, sticky dough. Now line the inside of a cake tin with plastic wrap and fill with the dough. Place the cake into your fridge and leave to chill for one day. Finally, remove the cake from the tin and coat generously with chocolate sprinkles before serving.

Note: this recipe contains raw egg – if you prefer, you may replace the egg with 2 tablespoons of water.
