Frikandellen (Dutch Sausages)

If you can’t find authentic Dutch frikandellen, then why not have a go at making them yourself? It’s actually far easier than you might think!


500 gr minced beef
1 small onion
1 tsp. of salt
1 tsp. of ground black pepper
1 tsp. of paprika powder
½ tsp. of nutmeg
1 tsp. of lemon juice
70 ml whipped cream



First pop all of the ingredients into a food processor and mix into a fine meat dough. Next roll the meat dough into sausages and place in hot (but not boiling) water for around 10 minutes. Remove the sausages from the water and leave to dry for at least 1 hour. Finally, fry the frikandellen for 5 minutes or until golden brown and serve the typical Dutch way – cut lengthways and crammed with curry sauce, mayonnaise and chopped onions!
