Give a typical Dutch winter dish a lovely spring twist using a few summery ingredients!
1 kilo of potatoes
Salt and pepper
Peel the potatoes, place in a pan of water containing a pinch of salt and bring to the boil. Meanwhile, cut the courgette and onion into small pieces. Place in a frying pan with a little olive oil and salt and pepper to taste, and fry gently until soft and golden brown. Once cooked, drain the potatoes and then mash with a potato masher. Finally mix in the courgette and onion. Enjoy!
