Hollandse mosselen (Dutch mussels)

Delicious with salad, fries and mayonnaise!

2 kg of mussels
½ a stalk of celery
1 large carrot
1 large leek
1 bunch of fresh parsley
2 dl dry white wine
1 fish stock cube
Freshly ground pepper

Dutch Mussels

Cut the carrots into small pieces, slice the leek into rings and chop the parsley. Rinse the mussels thoroughly in running water and remove any that are broken or open. Place the mussels into a large pan, add the vegetables and sprinkle with freshly ground pepper. Next pour in the white wine and 3 cups of water and add the stock cube. Bring to the boil and leave the mussels to simmer on a low heat for 10 minutes or until tender. Remove any mussels that have failed to open and then spoon with some of the vegetables into a deep dish. Serve in the typical Dutch way with salad, French fries and mayonnaise.
