Marsepein (Marzipan)

A traditional Dutch Sinterklaas treat that’s perfect for filling children’s shoes!

250g of icing sugar
250 gr of almonds
2 egg whites
A pinch of salt
A few drops of almond extract
Colouring (optional)

Rinse the almonds and boil in a pan of water for 10 minutes. Next, drain the almonds, crush in a blender and add the powdered sugar, 2 egg whites, a pinch of salt and a few drops of almond extract and the colouring if desired. Mix once more in the blender until a smooth, creamy consistency forms. Pour the mixture into a bowl, cover with a plate or foil and place in the fridge for 1 day or until the marzipan has set. Finally mould the marzipan into typical Dutch designs such as clogs, tulips and windmills or if you’re particularly creative, try fashioning mini Sinterklaas and Zwarte Piet figures from it.
