Treat the entire family to this typical Dutch favourite!
Sift the flour into a mixing bowl and add a pinch of salt. Pour in half of the milk and whisk well until a smooth batter forms. Now add the rest of the milk and the egg. Then rinse the currants, dry them using kitchen paper and add to the batter. Next, heat a knob of butter in a frying pan and coat the bottom of the pan with a thin layer of batter. Fry the pancakes over medium heat until golden brown on both sides. Serve the currant pancakes immediately with brown sugar.
