Griesmeelpudding met bessensap (semolina pudding with fruit berry juice)

A tempting Dutch pudding that’s so easy to prepare!

1 litre of milk
1 small vanilla stick
85 gr of semolina
100 gr of sugar
1 bottle of fruit berry juice
1 tablespoon cornstarch

Pour the milk into a saucepan, add a small piece of vanilla stick and bring to the boil. As the milk starts to boil, slowly pour in the semolina and stir until thoroughly mixed in. Allow the semolina to gently simmer over a low heat, stirring continuously. After 20 minutes, remove the vanilla stick from the pudding and thoroughly stir in three quarters of the sugar. Pour the mixture into a pudding mould and allow to cool and set. Meanwhile place the juice, 1 cup of water and the remaining sugar into a fresh pan and bring to the boil, adding a little vanilla if desired. Next, mix the cornstarch and a tablespoon of water together in a bowl and add to the juice, stirring continuously until it is completely absorbed into the juice. Then remove the pan from the heat and leave the juice to cool. Finally serve the set semolina on a plate and top with generous amount of the juice. A delicious summer pudding!
