Speklappen in ketjapsaus (Bacon Chops Indonesian Style)

Ketjap is the ideal base for a variety of tempting marinades. Try this delicious recipe for bacon chops Indonesian style – you simply won’t find a more typically Dutch meal!

4 bacon chops
1 onion
2 cloves of garlic
2 tbsp of ketjap or soy sauce
25 g of butter
1 lemon
1 tsp of ground ginger
Salt and pepper

First, chop the onion and press the garlic. Then rub the bacon chops with the garlic and some salt and pepper and leave for 5 minutes. Heat a skillet (without oil or butter), add the bacon chops and cook on both sides over a high heat until nicely browned. Next, remove the bacon from the pan and add the butter. Melt the butter and sauté the onions until glassy. Pour in the ketjap or soy sauce and squeeze half a lemon over the pan. Stir in all the residue from the bottom of the pan and add the ground ginger. Finally, place the bacon chops back into the pan and allow to simmer for 20 minutes. This is not only delicious with a variety of Indonesian dishes, but also perfect with potatoes and vegetables.
