Bitterballen (Meat Croquettes)

The perfect Dutch party snack!


1 can of beef or veal ragout
2 eggs
Cooking oil


First, empty the can of ragout into a bowl, sprinkle some breadcrumbs onto a plate and beat the egg together with two tablespoons of water in a separate bowl. Scoop a tablespoon of the ragout from the bowl and roll gently through the breadcrumbs. Carefully dip the ball in the egg mixture and roll again through the breadcrumbs, until a solid coating without cracks is achieved. Repeat until you have 6-8 croquettes. Next, heat the cooking oil in a frying pan until extremely hot, place the meatballs one by one into the pan and fry until golden brown. Allow the croquettes to drain on kitchen towel and serve with a bowl of Dutch mustard and cocktail sticks. If you can get hold of cocktail sticks with the Dutch flag on them, all the better!
