Andijvierolletjes met spek (Endive rolls with bacon)

A traditional Dutch favourite!


1 head of endive
10 slices of bacon
½ stock cube
Salt and pepper


Preheat your oven to 200 C and grease an oven proof dish with butter. Meanwhile, clean the endive in cold water and remove any large veins from the leaves. Lay 6 leaves on top of each other, roll them together and tie each roll with string. Repeat this process until you have used all the leaves. Now place the rolls into boiling water and allow them to boil for 10 minutes, until half cooked. Next, place the rolls on a plate and carefully remove the strings. Wrap a slice of bacon around each roll, sprinkle with paprika and place in the oven dish. Finally prepare a cup of stock using half a stock cube and pour over the rolls. Cover the oven dish with aluminium foil and place it in the oven for 15 minutes or until the rolls are nicely brown and cooked through.
