Speculaas (Dutch Biscuits)

Delicious with a cup of tea or coffee!


125g of self raising flour
60g of brown (caster) sugar
80g of cold butter
1 tablespoon of ‘Speculaaskruiden’. (if don’t have this Dutch spice you can create your own version with ground cardamom, coriander, ginger, cinnamon and cloves)
A pinch of salt


Sift the flour, sugar, spices and salt together into a mixing bowl. Add the cold butter, cut into small pieces (using two knives) and knead into the other ingredients to form a dough. Seal the bowl tightly with plastic wrap and let the dough rest for a day in the refrigerator, to allow the flavours of the spices to infuse. The following day, preheat the oven to 175 ° C and grease a baking tray. If you have a Dutch ‘speculaasplank’ you can use this as a biscuit mould, although any biscuit mould or cookie cutter will do. Next sprinkle the dough with flour before carefully pushing into the mould. Cut away any excess dough, gently pat the dough from the mould and place on the greased baking tray, leaving at least 2cm between each one. Place the baking tray in the centre of your oven and bake the biscuits for about 20 minutes until golden brown.
