Spekpannenkoeken (Bacon Pancakes)

One for the kids!

Ingredients:

400g of self raising flour
¾ litre of milk
1 teaspoon of sugar
200g of smoked bacon, thinly sliced
Dutch ‘schenkstroop’ or maple / pancake syrup
A pinch of salt

Preparation:

Sift the flour, sugar and salt into a mixing bowl. Create a hole in the flour and gently stir in the milk with a whisk to achieve a lump-free batter. Cover the pancake batter with a damp towel and leave in a warm place for about 1 hour. Meanwhile, fry the bacon in a pan until nice and crisp and remove from the pan. Pour the bacon fat into a bowl, as you can use this to fry the pancakes. Heat a little of the bacon fat in the pan and add a few slices of bacon. Then ladle sufficient batter into the pan so that the bottom is completely covered. Cook the pancake on a medium heat until the top is dry. Next, flip the pancake over and cook the other side until golden brown. Repeat this process until all the pancakes are cooked. Serve the pancakes whilst still warm, drizzle with syrup and wait for the kids to come running!
