A delicious recipe that makes perfect use of Dutch cheese!
Separate the egg whites from the yolks and place each into separate bowls. Next, grease an ovenproof dish with butter and preheat the oven to 200 C. Now melt the butter in a saucepan and as soon as it has melted, add the flour. Then, gradually pour in the milk whilst constantly stirring so that the mixture remains smooth. Once all the milk is absorbed into the sauce, boil for a further minute before adding the cheese and some pepper to taste. Pour a little of the cheese sauce into the egg yolks, stir well and add this to the saucepan. Now beat the egg whites until stiff, stir gently into the sauce and pour the entire mixture into an ovenproof dish. Place in the oven and leave for 25 minutes until cooked through and golden brown. Take care not to open the oven while baking, to ensure that your soufflé rises well. Serve immediately.
