Rode kool met appeltjes (Red cabbage with apples)

Fancy a warming dish on a cold spring evening? This Dutch favourite is perfect as an accompaniment to main meals.


1 red cabbage
2 cooking apples
6 cloves
40 g of butter
30 g of sugar


Slice the apples in half, remove the cores and cut into cubes. Next, remove the outer leaves of the red cabbage, cut in half (lengthways), remove the stump and cut into very thin strips. Now place both the cabbage and apple slices into a pan and add 3 dl of water, the cloves and a pinch of salt. Simmer on a low heat for about 15 minutes, stirring occasionally. Finally, add the butter and sugar and cook for a few minutes more. This dish is just perfect served with fried black pudding and potato – and you can’t get a more Dutch than that!
