Witlof met ham en kaas (Chicory with ham and cheese)

A popular Dutch dish!

8 stalks of chicory
8 slices of ham
2 eggs
5 dl of milk
40 gr grated extra mature Dutch cheese
40 g of butter
40 g of flour
5 tbsp of breadcrumbs

Preheat the oven to 190 C and grease an oven dish with butter. Boil the eggs for 10 minutes and allow to cool. Wash the chicory, remove the outer leaves and bring to the boil in a pot of salted water. Simmer for 25 minutes and then drain. Next, place the butter in a saucepan and melt over a low heat. Stir in the flour and gradually add the milk, stirring continuously until a smooth sauce forms. Add the grated cheese and stir thoroughly once more before turning off the heat. Wrap each piece of chicory in a slice of ham and gently place in the oven dish. Finely slice the boiled eggs and place over the ham. Finally pour over the cheese sauce and sprinkle with some grated cheese and breadcrumbs. Pop in the oven until it forms a crisp, golden brown crust.
