Loempia’s (Indonesian Spring rolls)

A delicious Indonesian snack, popular in the Netherlands

200 g of pork fillet
200 gr of flour
2 cloves of garlic
100 g of bean sprouts
1 leek
100 g of snow peas (or mange tout)
1 bunch of celery leaf
50 g of prawns
1 cm of root ginger
Ketjap manis
1 tsp of sugar
Salt and pepper
Sunflower oil

Add a pinch of salt to a pan of water and bring to the boil. Cook the pork fillet for 15 minutes and cut into cubes. Meanwhile, finely cut the garlic and ginger, slice the leek, finely chop both the celery leaf and the bean sprouts and remove the tops of the snow peas. Heat some sunflower oil in a pan and fry the cut vegetables and garlic for around 10 minutes. Next, add the diced pork, prawns, ginger, a teaspoon of sugar, a dash of ketjap manis and a pinch of salt and allow to simmer for a while. Place the flour into a bowl and pour in 3.5 dl of water. Add a pinch of salt and mix thoroughly until a smooth batter forms. Now pour some sunflower oil into a frying pan and fry the batter until it resembles thin pancakes that are lightly browned on one side. Make sure you leave sufficient batter for later. Place each pancake brown side up, on a cutting board and add two tablespoons of the vegetable / meat mixture, before folding over so that they completely closed. Finally, dip the spring rolls into the remaining batter and fry in hot oil (in a pan or deep fat fryer) until a crisp, golden brown.
