Drie in de pan (Three in the pan)

A traditional Dutch treat, popular with children!

300 g of self raising flour
3 dl of milk
1 tsp of sugar
1 egg
200 g of raisins
Caster sugar or syrup
A pinch of salt

Sift the flour into a mixing bowl and add a teaspoon of sugar and a pinch of salt. Warm the milk briefly in a saucepan until lukewarm and pour some of this into the flour. Whisk until a smooth mixture forms then add the egg, raisins and remaining milk. Stir the mixture thoroughly once more and allow to rise according to the time indicated on the packet. Next, melt some butter in a frying pan and using a large ladle, place three equal portions of the mixture into the pan, taking care to keep them separate. Once the top of each is dry, turn and fry the other side until both sides are golden brown. Finally place all three on a plate and serve hot with syrup or caster sugar.
