Boterkoek (Butter Cake)

250 g of flour
125 g of caster sugar
225 g of butter
1 sachet of vanilla sugar
1 egg

Preheat your oven to 175 C. Take a cake tin and grease with a little butter. Sift the flour and caster sugar together into a bowl and add cold butter, vanilla sugar and a pinch of salt. Cut the butter into cubes and knead it by hand into the flour to form a dough. Press the dough into the cake tin, to a thickness of approx. 2-3 cm. Next, beat the egg and brush over the dough. Finally, draw diagonal lines with a sharp knife, to create a diamond pattern on the dough. Cook the butter cake in the oven for 30 minutes or until golden brown and ensure that it is completely cool before removing from the cake tin.
