Bami Goreng (Fried Indonesian Noodles)

Ingredients:
1 pack of noodles
1 onion
1 teaspoon of sambal oelek
2 tablespoons of soy sauce
2 cloves of garlic
1 tsp of shrimp paste
500 g of chicken breast or pork fillet
1 leek
¼ white cabbage
2 tomatoes
4 eggs
A dash of milk
1 tbsp of sunflower oil
Salt and pepper

Preparation:
Prepare the noodles according to the instructions on the packet and then allow to cool. Slice the onion, crush the garlic, cut the leek into rings, slice the cabbage into thin strips, cut the tomatoes into wedges and dice the chicken or pork. Next, heat the sunflower oil in a wok or large frying pan and fry the onions and garlic together with the chilli and shrimp paste, until the onions are slightly transparent. Take special care not to burn the onions and garlic and make sure that the shrimp paste thoroughly dissolves! Add in the chicken or pork and salt and pepper to taste. Cook the diced chicken or pork until it is brown on the outside. Next add the leeks and cabbage and cook for a further 8 minutes at a fairly high temperature, so that the leeks are nice and crisp. Then add the tomato wedges and stir gently until the tomatoes disintegrate. Now, spoon the cooled noodles into the wok and heat through, stirring frequently. Next pour in the soy sauce and stir through once more, before removing the pan from the heat. Beat the eggs and a dash of milk together in a bowl and add salt and pepper to taste. Heat a little sunflower oil or butter in a frying pan, add the egg mixture and allow it to slowly solidify over a low heat. Turn the omelette after a few minutes and allow it to cook for a further two minutes. Finally, slice the cooked omelette into thin strips and place over the noodles. Serve with typical Indonesian side dishes such as prawn crackers, atjar tjampoer and seroendeng.
