Hollandse mayonaise (Dutch mayonnaise)

Fancy chips with fresh mayo, but have run out of mayonnaise? Then why not make it yourself with this typical Dutch recipe?

Ingredients:

2 eggs
2 teaspoons of mustard
3 tablespoons of vinegar
3 dl of sunflower oil
A pinch of sugar
Worcestershire sauce

Preparation:

Separate the yolks from the egg and mix with the mustard, salt and pepper until a smooth paste forms. Add a few drops of sunflower oil and vinegar and continue to stir until this is completely mixed in (note: take care to add just a few drops of oil at a time otherwise the mix may curdle, ruining the mayonnaise). Repeat until all the sunflower oil and vinegar has been added. Finally, add a few drops of Worcestershire sauce and a pinch of sugar to taste.

The Dutch particularly love homemade mayonnaise with chips !
